Dessert Crepes with Sweet Ricotta Cream and Strawberries

If you’ve been reading Two Lazy Gourmets for a while you might have noticed that I LOVE TO MAKE CREPES! (Ever since I got a new crepe pan for my birthday, I can’t stop making crepes.)

Yes, crepe-making is not necessarily a lazy process, but if you’ve never made them before you might be surprised by how simple the technique is. You can read how I do it here.

Today’s recipe is for dessert crepes, a change from my usual savory preference.

These dessert crepes with sweet, fresh filling are ridiculously easy and incredibly delicious.

The ricotta cream and strawberries can both be prepared in advance, to make serving time a breeze. Y

ou can fill and fold the crepes yourself or just set out the ingredients and let guests fix their own.

And, of course, you can use any soft fruit in place of the strawberries (if the fruit is sweet enough you can skip the sugar step).

Dessert Crepe Filling with Sweet Ricotta Cream and Strawberries

This sweet, fresh filling is ridiculously easy and incredibly delicious. The ricotta cream and strawberries can both be prepared in advance, to make serving time a breeze.

Ingredients
  

  • 1½ pounds strawberries hulled and sliced (about 4½ cups)
  • 3 tablespoons sugar divided
  • 1 cup 8 ounces ricotta cheese
  • ¼ cup heavy cream
  • [8-10 crepes]

Instructions
 

  • In a medium bowl, mix strawberries and 1 tablespoon of the sugar. Let stand at room temperature, stirring occasionally, until strawberries have softened and become juicy, at least 1 hour.
  • In a separate bowl, mix ricotta, cream, and the remaining 2 tablespoons of sugar.
  • Divide ricotta cream and strawberries among the crepes (adjusting quantities to your taste) and roll up or fold.

  2. Im going to a huge Easter celebration at my sisters, soon to in-laws. I was struggling over what to bring besides flowers and wine, as the host requested nothing at all. At work, earlier this week I saw a chef making stuffed strawberries, using ricotta cheese. I couldn’t remember what else bt the time I got home. So I searched and found your ridiculously amazing recipe. I’m going to use your crepe filling to stuff the strawberries. Wish me luck! I’m sure it’s going to be delightful. Thank you for your help.

  3. Thanks for the recipe. I’m going to serve this filling over baked pancakes at a brunch with family today after church. I can’t wait for everyone to try it!

    • Everyone loved this filling. It’s not too cheesy and not too sweet. I’m leaving out the strawberries this time and using a fruit whiskey compote recipe I created. I’m actually making the filling again this wknd for brunch because my family requested it again. 🙂 Thanks again for the recipe. Perfect filling!
